Palais Jamaï closed in 2014, and Fès waited twelve years for the state railway company that owns it to finish rebuilding a Grand Vizier's mansion into something guests could sleep in again. The restoration reopens this spring under the Preferred Hotels Legend Collection, with Alain Ducasse running the kitchens: 94 rooms carved from a 19th-century Fes el-Bali compound, zellij tilework and carved cedar intact from the original build. Still, the tilework is the tilework. Come back when the reviews are in.
